Meat Strip Alignment Technology
Description
Meat Strip Alignment Technology (MSAT) is a product and process to improve the texture of restructured meat products by aligning the meat fibres to create a product similar in texture to whole tissue meat. The equipment is designed to fit the end of a meat pump, allowing for a filling operation.

Availability
MLA and Food Science Australia collaborated in the development of MSAT by providing technical input into the scale-up of the equipment, sourcing raw material for the process and producing beef logs for market analysis of the finished product.
MSAT was extensively trialled via sensory testing but never commercially taken up by processors or value adders. Licenses are still available to interested parties.
