Refrigeration

Excellent chilling practice is an important component of processing.

The choice of refrigeration technology and methods impact:

  • Meat quality
  • Processing efficiency and production costs
  • Food safety
  • Development of innovative red meat products

MLA is working with key technology providers and processors to improve chilling and freezing technologies e.g. spray chilling, as well as investigate improved methods of packaging and transporting chilled and frozen product.

A key area of investment is the application of Rapid Cooling technologies, allowing chilling or freezing of meat within much shorter time frames (hours or even minutes) as compared to conventional refrigeration time frames. However, a key challenge to using Rapid Cooling technologies is maintaining eating quality, and MLA is developing some innovative approaches to addressing this limitation.
