Hide removal and preparation

The hide is one of the major sources of carcase contamination and is the most valuable beef co-product. As such, it is important to keep the hides clean prior to skinning and remove the hide efficiently and with minimal damage.

To ensure the efficient removal of a hide and reduce contamination, the carcase must be prepared through the removal of dags, hocks, horns, the opening of the belly cavity and bunging.

MLA's research and development during the hide removal and preparation phases includes the following areas:
